Diet Soda Cupcakes

I've mentioned before about following Weight Watchers and the recipes that I've accumulated during those days of dieting.

The recipe I am sharing today is a great one for when you are craving sweets. I've made these for holiday work parties and family gatherings while I was trying to stay away from higher calorie sweets. I've eaten my Diet Soda Cupcakes and didn't really miss the other sweets being served.

Diet Soda Cupcakes

Ingredients:
  • Cake mix
  • 1 egg
  • 10 oz. diet soda

Directions:

  • Combine cake mix, egg and diet soda until well blended.
  • Pour into cupcake/muffin tins and bake according to directions on box.

I usually use chocolate cake mix and diet cola. Yellow cake and lemon lime soda is great too! Or what about a white cake mix and some diet cream soda or even a pineapple flavored soda. So many different varieties makes these cupcakes very versatile!

These are great alone or topped with whipped cream or lowfat whipped topping. They would also be great topped with Fantastic Frosting (just use lowfat ingredients).

  6. PLEASE be absolutely certain the diet soda is sweetened with SPLENDA ONLY!!! The other artificial sweetners (saccarin, etc.) are DANGEROUS when heated!! They turn into formaldehyde when heated above a certain degree (120* if I remember correctly).
