I did pretty good last week. I managed to stick to my menu plan more than I've been able to the last few weeks. I still made a few changes here and there to accomodate our schedule. For example, Saturday was supposed to be our leftover night. That was switched to Thursday since we were going out near dinner time and I needed something quick for dinner. I made Gizmo Sandwiches to save some hoagie rolls from going stale.
We're still trying to avoid doing a full grocery list worth of shopping. But still picking up a few items here and there. And trying to keep the menu planned using mostly what is on hand.
Here's the plan for this week:
- Monday: Oven Baked Pork Chops, Spaghetti Squash, Baked Beans.
- Tuesday: Potato Soup, Salmon Patties, Cornbread Casserole.
- Wednesday: On-Cor Veal Parm Sandwiches, Pasta
- Thursday: Beef Barley Soup, biscuits
- Friday: Pork Tenderloin, Mashed Potatoes, Glazed Carrots with Onions, Biscuits
- Saturday: Enchiladas
- Sunday: Leftovers

I have some mashed sweet potatoes that I'd like to use up. Looking to create them into something new.
I am also planning on baking Jen's Gooey Butter Cake that I posted about last week. I'd also like to attempt a few new recipes in the next couple of weeks. Here's hoping that Gracie cooperates so that Mommy can try some new recipes, so I don't run out of food to blog about!

ReplyDeleteJ~spaghetti squash is easy! There's usually a sticker on the squash. This one says to pierce the rind and microwave for 5-6 minutes per pound, until rind feels soft. Let sit for 5 minutes, cut in half and scoop out seeds. (We usually cut it in half, remove seeds, then microwave. I'll try it their way this time and see.
After that you just shred it with a fork, it'll look like spaghetti. Although, I don't use it in place of spaghetti like some people do. We serve it as a side dish.
