I almost decided to skip it entirely this week, since most weeks I barely follow my plan half way. So, last week really had me discouraged about attempting to follow again.
But I'm going to give it another try and see what happens.
I picked up some fresh produce over the weekend. A local farmer's stand and Giant provided me with some nice vegetables that I plan on serving this week. When we got home from the store yesterday afternoon, Grace took a nap and I started prepping my veggies. I find that if I find some time to prep all of them (or at least most of them) they'll be more likely to get used in recipes rather than turn to a soupy mess in my veggie bin.
Here's a list of dinners I plan on making this week:
- Spaghetti with All Day Slow Cooker Spaghetti Sauce
- Hamburgers, grilled potatoes, macaroni salad
- Tuna salad sandwiches, pasta salad
- Applesauce chicken, sweet potatoes, cucumber salad
- Cranberry pork, buttered egg noodles, corn
- Grilled Cheese Sandwiches, pasta salad, macaroni salad
- leftover buffet
I'm off to a good start today. I got up early and started my spaghetti sauce in the crock pot. I followed my recipe linked above, excpet I added some extra veggies, used less ground meat, left out the sausage, and added some diced kielbasa. The house smells wonderful!
I plan on making my macaroni salad tonight after dinner. I have a bit of a head start since I prepped most of the veggies last night.
Here's hoping that I follow this plan better than last week's!

I have ebbs and flows when it comes to meal planning consistency myself...I have learned to not beat myself up over it.. its supposed to be a means of stress relief not an additional "burden" for us so if I dont get to it one week or for several months LOL then oh well

We all have those weeks we can't stick with it. Ha, at least we come up w plans though, right?! You asked about the top layer of the crescent rolls on my recipe for the appetizer. YOu just grab a wheat thin or cracker and scoop from the top to the bottom getting 2 layers of crescent rolls and the cheese in the middle...SO good. :)

ReplyDeleteMeal planning isn't something that happens overnight - in time, you'll find what works best for you and your family. One thing I do is, during the course of the week, when I think of something I want to have for dinner, I'll jot it down right on the meal plan - then the next week, that gets "first priority" - unless I come up with better ideas. . . then it gets carried over to the NEXT next week. Just find what works best for you, and remember - it's not the end of the world!
How did you do this week? I didn't do as good as I thought I would! Sadly I over loaded my plate and haven't have much time to cook. I did cook Monday and Tuesday,
