Menu Plan Monday: July 5th

Last week's menu plan was a total disaster.  I think this was my biggest fail in menu planning so far!

One thing that went wrong was the crock pot cranberry pork.  After weeks of putting it in my menu plan, I was finally going to make it on Wednesday.  I thawed out the pork tenderloin and when I opened it, it smelled a little "off".  So, we had leftovers that night.

I'm not really sure if the pork was bad or not.  Sometimes I'm funny about pork.  I always think it smells bad.  I asked my husband to take a sniff when he got home, but he forgot and by the time he remembered there was no point.  It had to be spoiled by then.

We ate lots of leftovers this week.  Lots of burgers and hot dogs too.  And on Friday, we ended up ordering pizza.

So, like I said, it was a huge FAILURE.

Joe worked this weekend and is back at work now, as I type this.  Earlier today, we ran a few errands and grabbed Sonic while we were out.  Kind of a consolation prize since we didn't have much of a holiday weekend.  Since Joe worked the weekend, he'll have tomorrow off.

Tomorrow, I have no idea what's planned.  I know I want to hit a local produce stand for some fresh veggies and the dairy for some milk and eggs.  But beyond that, I don't know what the day will bring.

Since it's a short week, I'm just planning a few easy meals:

  • oven barbecue chicken, macaroni and shrimp salad, corn on the cob
  • hot dogs, macaroni and cheese, green beans
  • Barbecue Chicken Salad (on wraps), macaroni and shrimp salad, corn on the cob
  • hamburgers, sliced potatoes, baked beans, cucumber salad
  • leftover night
I have some ground turkey that I need to prepare or freeze.  I was thinking maybe a meatloaf, but I'm not sure I want to turn on the oven.  It's been pretty brutal  here the past few days.  Guess I'll go pop it into the freezer.

I hope you all have a great and successful menu planning week!  For more menu planning ideas, follow me over to Menu Plan Monday

  1. Hi Allison, I have had the same problem with worrying if meat is good or not, so here is a little tip to keep in mind about pork. When you open those cryovac packages that pork usually comes in it will smell really bad because of the blood that has drained out of the meat in the bag. Rinse the meat in cold water and let it stand a minute or better yet cut it open then smell the meat in the center. That will give you a better idea if it is bad or not. Hope this helps you in the future. doni @ Up The Rainbow Creek
