Menu Plan Monday ~ Week of January 10th

I've mentioned before that I don't always have a lot of success with sticking with my menu plans.  I either forget to thaw something for dinner or end up craving some sort of fast food or take out.  Last week, I stuck to the plan pretty much the entire week!  I'm really pleased with myself! 

Last night, we had a nice turkey dinner.  Turkey, mashed potoes, vegetables.  Grace really enjoyed the turkey!  Right after dinner, I picked apart the rest of the turkey and divided into 2-cup portions for future meals.  We should be able to get 5 more dinners/recipes from that turkey!  I also made a huge pot of turkey broth!  Mmmmm! 

I'll be using some of the diced turkey in a couple of meals this week: 

Here's the plan for this week: 
  • Monday:  Enchiladas
  • Tuesday:  Turkey Noodle Soup, bread, salad
  • Wednesday:  Applesauce Chicken, potatoes, peas 

  • Thursday:  Turkey Chili, corn bread
  • Friday:  Beef Stew, biscuits, salad

  • Saturday:  Chicken, rice, corn
  • Sunday:  Scalloped Macaroni and Ham, biscuits, salad
I'll be trying a couple of new recipes this week (Turkey Chili, Scalloped Macaroni and Ham).  I'll share them here soon!

  2. I had to check out your chicken applesauce recipe. I have chicken in the freezer and a large jar of applesauce and time to do the crock pot for dinner. Thanks for the recipe idea. By the way Grace is beautiful. There are some things in life I wished I could have done better or perhaps not at all, but having my daughter isn't one of them. I treasure being a mom every day. Can't think of a better job than that....even though she is now 22. Once a mom, always a mom.
