Corn Quesadillas

I love to serve quesadillas alongside a nice hot bowl of soup or chili, so as soon as I saw this recipe for Zesty Corn Quesadillas over at delmonte.com, I knew I had to make them for my family.  I decided to use a Mexican style corn in place of plain corn, for a bit more flavor!  I also opted to use the less traditional mozzarella cheese since that's what I normally use for my cheese quesadillas. 



Corn Quesadillas

Ingredients:
  • 1/4 cup Mexican-style corn
  • 1/4 cup shredded mozzarella cheese
  • 1 Tbs. salsa
  • 1 medium flour tortilla (I used 96% fat free)
Directions:
  • Place tortilla in hot skillet over medium heat.
  • Fill one side of the tortilla with the remaining ingredients.
  • Fold other half of the tortilla over the corn/cheese mixture.
  • Cook for a couple of minutes on each side, until tortilla is golden brown and cheese is melted. 

Serves 1
