It's been very difficult to find blogging time this summer! Mainly due to Grace and her horrible sleep habits and the fact that laptop has now decided to become a desktop. Working around those two factors has been a huge pain in the butt!
Along with blogging, menu planning has also been neglected and I've been finding myself at a total loss come four o'clock when it's time to start getting dinner to the table.
Blogging and menu planning tend to keep me on track and that's really where I need to be during the next several months. So, I'm back...with lots of great things planned for the new season ahead! I'm really looking forward to sharing it all with you...and I hope you will all come back to check out what's going on around here!
For now, here's what's on the menu for this week!
Monday
Chicken with 40 Cloves of Garlic
The photo above is raw,
it doesn't look so pretty at start or finish
but it's oh-so-delicious!
Tuesday
Chili Macaroni
This is an old favorite that I just don't serve often enough!
Can't wait to enjoy this delicious dish!
I even have a head start with some precooked
ground beef in the fridge!
Wednesday
Leftover Night

I love to hear from our readers, but don't always have the time to respond to every comment...but please don't let that stop you from saying hello or letting me know what you think of the content here Under the Big Oak Tree.
Also, I apologize for activating the word verification option for comments. My in-box has been flooded with SPAM comments making it very difficult to weed through and find the comments from our readers!
